These roll-ups are quick and easy and can be made with just about any ingredient you have in your fridge. These have cheese and avocado, but alternatives could include bacon, lettuce, and tomato with BBQ sauce, or salsa, guacamole and tortilla chips. Be creative!
Whole Wheat wrap
1/2 cup of cheddar cheese
1/4 avocado, sliced
1 carrot, shredded
Salt and pepper to taste
Optional: pesto sauce
If using, spread the pesto sauce thinly on the wrap. Top with cheese, avocado, carrot and salt and pepper and roll up. Slice the wrap in 1-2" wide slices.
Note: Trader Joe's carries a smaller container of pesto and kale sauce that is also vegan! It is in the refrigerated section by the cold cuts and hummus.
