Peanut Butter Tortilla Turnovers

Peanut butter gets new digs in this recipe that includes peanut butter, bananas, cinnamon and tortillas, all fried up into yummy goodness. This recipe tastes great, is a crowd-pleaser and takes about 5 minutes to make.

2 whole wheat tortillas (10-inch)

¼ cup peanut butter

¼ tsp cinnamon

1 medium-large banana, sliced

½ - 1 tsp olive or canola oil

Spread peanut butter evenly on tortillas. Sprinkle with cinnamon and place banana on half of each tortilla. Fold tortilla so that you have two half-moon shapes. Pour oil into fry pan and allow to heat on medium. Add two folded tortillas and cook for 3-5 minutes until lightly browned. Flip to cook other side, remove from heat and cool slightly. Cut into wedges.
