Rainbow Sandwiches

These sandwiches are made with healthy natural colors from pureed vegetables. They look great and taste great too. Note: If you make the spreads the day before, putting the sandwiches together the next day is a breeze.

Ingredients:

4 carrots

3 large handfuls of spinach leaves

1 bag of frozen peas

2 cups of cooked beets

Cream cheese or goat cheese, optional

4 slices of wholemeal bread

Steam the carrots for 20 minutes adding in the peas for the last 5 minutes, until soft, then cool. Create three different colored spreads in a blender.  If you choose to use cheese, use 2 Tbs of cheese per spread and add to blender to puree.  Make the orange spread by adding the carrots to the blender with or without the cheese.  Season with salt and pepper as desired.  Transfer to a jar for storing in the refrigerator.  Next, make the green spread by adding the spinach leaves and peas to the blender.  Season with salt and pepper and add 2 Tbs of cheese, if desired. Transfer to jar and store in refrigerator. Finally, add the cooked beats to the blender and season with salt and pepper and cheese, if using. Transfer to jar and refrigerate.  Refrigerating the spreads will help them to set. The next day, spread each color on one side of the bread, cover with another slice of bread and keep spreading until all spreads have been used. You should end up using 4 slices of bread for a complete sandwich.  Cut into triangles or any shape desired.
