Most everyone loves avocados and they're a dream in this super easy sandwich.
2 hard boiled eggs (boiled and refrigerated the day before, preferably)
2 slices of bread, toasted
1 ripe avocado
1 radish, thinly sliced
1 tbs chopped chives
Salt and pepper, to taste
Toast the bread lightly. Mash the avocado and add any additional seasonings you prefer (balsamic vinegar, nutritional yeast, lemon/lime juice, etc...). Spread the mashed avocado on the toasted bread. Thinly slice the radish and use a grater to prepare the hard boiled eggs. Add the radish and egg to the toast and add salt and pepper to taste. Can be served open-faced or as a sandwich. If the sandwich is being transported in an awesome Gather lunchbox, make sure to put a toothpick in the middle to prevent shifting.
